Instructions
- Heat olive oil over medium heat in a skillet.

- Season chicken thighs with salt and pepper.
- Add chicken thighs to skillet with onions. Cook covered on medium/low heat for 10 minutes.
- Shred the chicken in the skillet with two forks.
- Stir in BBQ sauce and heat through for 1 minute.
- Top with shredded cheese and cover for 1-2 minutes until melted.
