- 1/2 medium onion, chopped

- 1 tablespoon olive oil
- 3 cloves garlic, minced
- 2 tablespoons flour
- 6 cups chicken broth
- 1/4 teaspoon Italian seasoning
- 1.5 pounds uncooked chicken breasts
- 1 cup uncooked orzo
- 1 tablespoon lemon juice (or to taste)
- 1 tablespoon chopped fresh parsley (or to taste)
- Salt and pepper to taste
Instructions
- Heat butter and olive oil in a large pot over medium-high heat.
- Sauté celery, carrots, and onion for 5-7 minutes until softened.
- Add garlic and cook for 30 seconds, then stir in flour.
- Pour in chicken broth and add Italian seasoning and chicken breasts.
- Bring to a boil, then cover and simmer for 15 minutes.
- Stir in orzo and cook for an additional 10 minutes.
- Remove and shred chicken, return it to the pot.
- Add lemon juice and parsley, season with salt and pepper.
