  • 6 cups chicken broth

  • 1 cup uncooked orzo
  • 1 tablespoon lemon juice (or to taste)

  • Salt and pepper to taste

Instructions

  • Heat butter and olive oil in a large pot over medium-high heat.
  • Sauté celery, carrots, and onion for 5-7 minutes until softened.
  • Add garlic and cook for 30 seconds, then stir in flour.
  • Pour in chicken broth and add Italian seasoning and chicken breasts.
  • Bring to a boil, then cover and simmer for 15 minutes.
  • Stir in orzo and cook for an additional 10 minutes.
  • Remove and shred chicken, return it to the pot.
  • Add lemon juice and parsley, season with salt and pepper.
