- 1/2 cup (91 g) Swerve Granular sweetener
- 1/3 cup (36 g) whey protein powder (or egg white protein powder)
- 2 tsp baking powder
- 2 cups (308 g) finely chopped peaches (about 2 medium peaches)
Instructions
- Prepare the streusel by whisking almond flour, Swerve Brown, and salt; mix in melted butter until crumbly.
- Preheat oven to 350°F (175°C) and line muffin cups.
- In a bowl, whisk sour cream, eggs, and extracts until smooth.
- Stir in almond flour, Swerve Granular, protein powder, baking powder, and salt; fold in 1 1/2 cups chopped peaches.
- Fill muffin cups 3/4 full; top with extra peach pieces and streusel.
- Bake for 23 to 28 minutes until golden brown; cool before serving.
