- 1 lb Italian sausage
- 1 cup shredded mozzarella
- 1/3 cup grated or shredded parmesan
- 1 shredded zucchini (about 1 cup)
- 1 egg
- 2 tsp dried minced onion
- 2 tsp dried minced garlic
- 2 tsp dried basil
- 1 tsp salt
- 1 cup marinara sauce
- 8 oz shredded cheese (a blend of mozzarella and provolone recommended)
Instructions
- Combine ground turkey and Italian sausage in a large bowl.
- Mix in shredded zucchini, egg, dried minced onion, garlic, basil, and salt until thoroughly blended.
- Shape into about 24 meatballs and arrange them in a greased casserole dish.
- Preheat oven to 400°F (200°C) and bake meatballs for 30 minutes.
- Drain cooking liquid from the casserole dish and coat meatballs with marinara sauce.
- Top with mozzarella and provolone cheese, then return to oven for 10-15 minutes.
- Broil for 3-4 minutes for a golden cheese crust if desired.
- Serve with a fresh side salad or low-carb bread.
