  • 2 ½ tablespoons Low-Carb Granulated Sweetener (for filling)
  • 1 teaspoon Ground Cinnamon
  • 2 oz Cream Cheese (for icing)
  • 1 ½ tablespoons Heavy Whipping Cream
  • ½ teaspoon Vanilla Extract (for icing)
  • 2 tablespoons Powdered Low-Carb Sweetener
  • 1 teaspoon Orange Zest (optional garnish)

Instructions

  • Melt shredded mozzarella and cream cheese in a microwave-safe bowl.
  • Mix melted cheese with xanthan gum, baking powder, almond flour, and sweetener until well blended.
  • Add egg and vanilla extract, knead to form sticky dough, and shape into a thin rectangle between parchment paper.
  • Combine cinnamon and sweetener for filling, sprinkle over dough after buttering it.
  • Roll and cut into approximately 10 equal rounds.
  • Preheat air fryer to 350ºF, cook rolls for about 5-6 minutes on one side; flip and cook for 4-5 more minutes.
