Instructions
- Brine chicken tenders in pickle juice overnight.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix crushed pork rinds, parmesan, black pepper, smoked paprika, and garlic powder in a bowl.
- Whisk eggs in a separate bowl.
- Rinse brined chicken and pat dry, then dip in eggs and coat with the pork rind mixture.
- Arrange on the baking sheet and bake for 18-20 minutes until the internal temperature reaches 165°F (74°C).
