- 1/2 cup (113.5 g) butter, melted
- 1 tsp vanilla extract
- Water, if needed
- 3 ounces (85.05 g) sugar-free dark chocolate, chopped
- 1/2 ounce (14.17 g) cocoa butter or 1 tbsp coconut oil
Instructions
- Whisk together almond flour, powdered sweetener, cocoa powder, and salt in a bowl.
- Stir in melted butter and vanilla extract until dough forms, adding water if too crumbly.
- Roll dough into 1-inch balls and place on wax-lined baking sheet.
- Freeze truffles for at least 1 hour.
- Melt sugar-free dark chocolate and cocoa butter over simmering water.
- Coat each truffle in melted chocolate and return to the baking sheet.
- Add decorations if desired before chocolate hardens.
