- 1/2 cup Unsalted butter (softened)
- 2/3 cup Besti Monk Fruit Allulose Blend
- 4 large Eggs (at room temperature)
- 1/2 cup Unsweetened almond milk (at room temperature)
- 2 tsp Banana extract
- 1 cup Chopped walnuts (optional, divided)
Instructions
- Preheat oven to 350°F (176°C) and prepare a loaf pan with parchment paper.
- In a large bowl, mix almond flour, coconut flour, baking powder, cinnamon, xanthan gum, and sea salt.
- In another bowl, cream the softened butter with Besti Monk Fruit Allulose Blend until light and fluffy.
- Add eggs one at a time, then mix in almond milk and banana extract.
- Gradually add dry ingredients to wet mixture until a thick batter forms.
- Fold in 3/4 cup of chopped walnuts and transfer batter to the loaf pan.
- Sprinkle reserved walnuts on top and bake for 30-40 minutes, checking doneness with a toothpick.
- Cool completely before slicing.
