  • 1/4 cup Wholesome Yum Coconut Flour
  • 1 tbsp Baking powder
  • 2 tsp Cinnamon
  • 1/2 tsp Xanthan gum
  • 1/4 tsp Sea salt
  • 1/2 cup Unsalted butter (softened)
  • 2/3 cup Besti Monk Fruit Allulose Blend
  • 4 large Eggs (at room temperature)
  • 1/2 cup Unsweetened almond milk (at room temperature)
  • 2 tsp Banana extract
  • 1 cup Chopped walnuts (optional, divided)

Instructions

  • Preheat oven to 350°F (176°C) and prepare a loaf pan with parchment paper.
  • In a large bowl, mix almond flour, coconut flour, baking powder, cinnamon, xanthan gum, and sea salt.
  • In another bowl, cream the softened butter with Besti Monk Fruit Allulose Blend until light and fluffy.
  • Add eggs one at a time, then mix in almond milk and banana extract.
  • Gradually add dry ingredients to wet mixture until a thick batter forms.
  • Fold in 3/4 cup of chopped walnuts and transfer batter to the loaf pan.
  • Sprinkle reserved walnuts on top and bake for 30-40 minutes, checking doneness with a toothpick.
  • Cool completely before slicing.
