- 1 tsp sea salt
- 1/2 tsp black pepper
- 1 lb boneless skinless chicken breasts
- 6 cups chicken broth, reduced sodium
- 1 cup broccoli, cut into florets
- 1 cup cauliflower, cut into florets
- 2 tbsp lemon juice
Instructions
- Heat the olive oil in a Dutch oven over medium-high heat.
- Add diced onion, minced garlic, and ginger, sauté until fragrant.
- Incorporate diced bell peppers, seasonings, and cook for 3 minutes.
- Add chicken breasts and broth, bring to a simmer, and cook for 20 minutes.
- Remove chicken, shred it, and add back to the soup.
- Add broccoli and cauliflower florets, simmer for another 10 minutes.
- Stir in lemon juice before serving.
