Ingredients

  • 1/4 tsp red pepper flakes (optional)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 lb boneless skinless chicken breasts
  • 6 cups chicken broth, reduced sodium
  • 1 cup broccoli, cut into florets
  • 1 cup cauliflower, cut into florets
  • 2 tbsp lemon juice

Instructions

  • Heat the olive oil in a Dutch oven over medium-high heat.
  • Add diced onion, minced garlic, and ginger, sauté until fragrant.
  • Incorporate diced bell peppers, seasonings, and cook for 3 minutes.
  • Add chicken breasts and broth, bring to a simmer, and cook for 20 minutes.
  • Remove chicken, shred it, and add back to the soup.
  • Add broccoli and cauliflower florets, simmer for another 10 minutes.
  • Stir in lemon juice before serving.
