  • 2 medium yellow squash, sliced into half-moons

  • ½ teaspoon dried thyme
  • ¾ teaspoon garlic powder
  • 1 cup grated mozzarella cheese
  • ½ cup coarsely grated Parmesan cheese (extra for topping if desired)

Instructions

  • Preheat your oven to 350°F (180°C) and grease your baking dish.
  • Rinse and slice zucchini and yellow squash into half-moons.
  • Chop fresh basil and slice green onions.
  • In a mixing bowl, combine sliced vegetables, herbs, seasonings, and half of the cheese.
  • Transfer mixture to the baking dish and bake uncovered for 25-30 minutes.
