- 2 medium zucchini, sliced into half-moons
- 2 medium yellow squash, sliced into half-moons
- 4 tablespoons chopped fresh basil (adjust to taste)
- 2 tablespoons thinly sliced green onions
- ½ teaspoon dried thyme
- ¾ teaspoon garlic powder
- 1 cup grated mozzarella cheese
- ½ cup coarsely grated Parmesan cheese (extra for topping if desired)
- Salt and freshly ground black pepper, to taste
Instructions
- Preheat your oven to 350°F (180°C) and grease your baking dish.
- Rinse and slice zucchini and yellow squash into half-moons.
- Chop fresh basil and slice green onions.
- In a mixing bowl, combine sliced vegetables, herbs, seasonings, and half of the cheese.
- Transfer mixture to the baking dish and bake uncovered for 25-30 minutes.
- Add remaining cheese on top and bake for an additional 10-15 minutes until golden brown.
