- 2 lbs ground pork, beef, or sausage
- 2 (8-ounce) packages cream cheese
- 2 (10-ounce) cans of Rotel diced tomatoes and green chilies
- 1 tablespoon Adobo seasoning or taco seasoning
- 2 teaspoons ancho chili powder
- 4 cups chicken broth
- 1–2 tablespoons cilantro, fresh or dried (optional)
- 1/2 cup shredded cheese for garnish (optional)
Instructions
- Brown the meat with half of the adobo or taco seasoning in a skillet.
- Combine cream cheese, Rotel, and remaining seasoning in the crock pot.
- Add the browned meat to the mixture and stir well.
- Pour in the chicken broth and add ancho chili powder, then stir.
- Cover and cook on low for 4 hours or high for 2 hours.
- Before serving, sprinkle with fresh cilantro and shredded cheese if desired.
