- 3 large zucchinis (or 4 small)
- 2 cups marinara or pasta sauce
- 3 cups freshly shredded mozzarella cheese
- 1 cup shredded parmesan cheese

Instructions
- Heat a skillet over medium heat and cook ground chicken until no pink remains, seasoning with salt, pepper, and garlic powder.
- Add marinara sauce to the cooked chicken and simmer to thicken.
- Preheat oven to 400°F (200°C) and prepare a baking dish.
- Halve zucchinis lengthwise and scoop out insides to create boats.
- Mix chicken and sauce with 2 cups of mozzarella and 1/2 cup of parmesan.
- Fill zucchini halves with the chicken mixture and top with remaining cheeses.
- Bake uncovered for 25 minutes and broil briefly for a golden top.
