  • 1 cup shredded zucchini (about 1 large or 2 small zucchini)
  • 2 tablespoons chopped chives
  • 4 tablespoons butter (melted)

Instructions

  • Preheat the oven to 350°F (175°C) and butter a 9×5 loaf pan.
  • In a bowl, whisk together dry ingredients including flour, baking powder, salt, garlic powder, onion powder, and black pepper.
  • Stir in shredded asiago cheese and zucchini until coated with flour mixture.
  • In another bowl, mix beer, honey, and chives, then combine with dry ingredients until a sticky dough forms.
  • Pour the batter into the loaf pan, spread evenly, and drizzle melted butter on top.
  • Bake for 55 to 60 minutes or until a toothpick comes out clean; cover with foil if it darkens.
  • Let the bread cool in the pan for 5 minutes, then move to a wire rack for an additional 10 minutes before slicing.
